In recent years, there´s been a lot of emphasis placed on a food movment known as “Farm To Table.” That is, the food that you consume is so fresh it just came directly from where it was produced. On our third day in Naples, we were able to experience this first hand.
We hooked up with A.B.C Cooperative (Allevatori Bufalini Casertani) which produces some of the world´s best fresh mozzarella from buffalo in Italy´s Campania region. We started off our day by visiting a buffalo farm (one of 15 farms from which ABC´s milk comes from every morning). After that, it was off to the factory where the milk is made into fresh mozzarella, packaged, and sent around the world. And finally, we were able to sit down to one of the most delicious lunches I´ve ever had with some folks from the company.
In later posts, I´ll be detailing the process behind producing such high quality cheese. But for now… here are some pics.
